Buckwheat salad with green vegetables


Ingredients (for 4 people):
150 grams of buckwheat
6 dl of water
1 large avocado, in pieces
150 grams snow peas or sugar snaps, broken in half
1 zucchini in slices
200 grams of hard goat cheese in pieces
1 spoon of lemon juice and grated lemon zest
freshly ground pepper and salt to taste

Preparation of buckwheat salad


1 Boil the buckwheat with water and a pinch of salt.

2 Cook for 5 minutes and put in the Eco-oven for 25 minutes.

3 Blanch the snow peas for a few minutes.

4 Fry the zucchini briefly.

5 Mix all the ingredients together once the buckwheat is ready.

6 Season with freshly ground pepper and salt and olive oil
