Butter stew

Nice and easy and tender

Ingredients (for 4 people):
700 grams of organic beef stew
150 gr smoked bacon cubes
4 tablespoons silver onions
2 tablespoons butter
1 clove of garlic, crushed
25 grams of flour
2 dl broth
2 dl of red wine
2 bay leaves
1 bouquet garni (mixture of thyme, oregano, rosemary, parsley, marjoram or whatever you have on hand)
freshly ground pepper and salt

Preparation of the stew

1 Put the meat out of the fridge one hour in advance. Cut the meat into cubes of 3 cm.

2 Fry the bacon in the butter in a large cast-iron pan.

3 Fry the silver onions for a minute. Then roast the meat and add garlic. Sprinkle the meat with flour.

4 Heat the broth and wine and add it to the meat little by little. The meat must be just under the moisture.

5 Keep stirring until a smooth, thin sauce is created.

6 Add the spices and let everything come to a boil. Season with salt and pepper.

7 Simmer gently for 10 to 15 minutes, or until the dish is thoroughly hot.

8 Put in the eco oven for at least 3 hours, longer is also possible. The longer the more tender. After 3 hours, boil the meat and put it back in the Eco-oven.
