Lentil curry with almond shavings

A vegan Indian recipe

 

Ingredients (for 4 people):
360 gram dupuis lentils, soaked in plenty of water for 4 hours
2 tablespoons sunflower oil
1 large onion, chopped
1 winter carrot in pieces
2 tsp cumin seeds
2 tsp mustard seeds
2.5 cm fresh ginger grated
2 tsp turmeric or turmeric
1 tsp chili powder
1 tsp garam masala
4 dl coconut milk
1 can of tomato cubes
25 g roasted almond shavings
4 tbsp chopped coriander

 

Preparation of the lentil curry

1 Put the lentils in plenty of boiling water, 2 cm under water and bring to the boil
2 Let boil for 15 minutes and put in the Eco oven for 1.5 hours. You can now get the other groceries or do something fun
3 In the meantime, heat 2 tablespoons oil in the pan and fry the onion
4 Add the carrot and herbs and fry for 5 minutes while stirring
5 Add the tomatoes and and bring back to the boil
6 Drain the lentils when they are ready and add to the dish
7 Add the coconut milk
8 Bring it back to the boil and put in the Eco-oven for 45 minutes
9 Sprinkle the dish with the roasted almonds and the koreander

Serve the dish with rice or roti

TIP: You can also use red or yellow lentils. You do not need to pre-cook them and can simply take them into the pan with the carrots (step 4)
If you don’t have time to soak the Dupui lentils, you can also cook them for 1.5 hours
