Carrot and chicken stew from Ekomenu made in the EcoStoof®

Ingredients for 4 people
600 grams of carrots,
2 red onions
25 grams of raisins
2 courgettes
400 grams of chicken fillet, diced
300 grams of whole wheat couscous
3 tablespoons of Ras el Hanout
Add yourself
600 ml water or broth
pinch of salt and (chilli) pepper
2 tablespoons vegetable oil
cooking time 1 minute stewing time 30 minutes

- Sprinkle the chicken thigh fillet cubes with half of the ras el hanout spices, salt, and (chilli) pepper. Heat oil in a braising pan and fry the chicken over medium heat until lightly browned all around.
- Wash or peel the carrots and cut them very small. Wash the courgettes and cut them into small cubes. Peel the onion and cut it into wedges. Fry the carrots, courgettes, and onion with the chicken for 2 minutes. Add the water (or broth), the rest of the ras el hanout spices, and raisins and bring to a boil while stirring.
- Stir the couscous into the mixture. Put the lid on the pan and cook for another 1 minute until the lid is hot.
- Place in the EcoStoof® for 30 minutes (or longer).
- Serve in bowls or on plates.
TIP
This stew is also very tasty with some lemon juice and a dollop of crème fraîche. Add chili pepper for more spice.
