Ecostoof on Aruba

This morning, my first thought was: is it raining again? Today the sky is grey, and the clouds seem to have decided to turn our little country into a real puddle. During these dreary late winter days, there’s really only one thing I want to do: travel away to a sunny, dry, and preferably warm place, even if only in my thoughts. How wonderful that I'm starting this blog today of all days! Let's dream away and talk about Ecostoof on a sunny island. Ecostoof on Aruba, a wonderful place where I had the privilege of doing research for my thesis on the socio-ecological importance of mangroves.

Breakfast on the beach

Okay, imagine this: you wake up and the first thing you hear is the rustling of palm trees. The sun shines in on your swimwear. You hung it up so it could dry overnight, but now it almost seems to look at you questioningly: when are we going again? When will you be sitting with your toes in the sand, and your dushi next to you, looking at the sea? Maybe you can have breakfast on the beach... a picnic and a morning swim, is there a better way to start the day?

My secret ingredient is peanut butter in yogurt

Yes, breakfast! Now we're getting to the point. This means we're going to add some flavors to this wonderful dream image. For me, breakfast is the best meal of the day. I have a favorite breakfast, and it's truly a bit sacred. My favorite breakfast is yogurt with granola, nuts, fruit, and (call me crazy or call me a genius) a little bit of peanut butter.

Everything here is expensive, so I make my own yogurt

Now, you can find all these ingredients in the supermarkets on the island, but because Aruba has to import most of its food, prices can really add up. I even checked again, and a liter of quark costs seven euros! A liter of milk, on the other hand, can be found for under two euros. That's why I recommend everyone who lives in Aruba (and everyone who loves yogurt, cooking, experimenting, and of course Ecostoof) to make their own yogurt from milk, in the Ecostoof! (Huh, yogurt from the Ecostoof? Yes, indeed! Did I surprise you or not?)

Combine your yogurt with granola, nuts, seeds, (Aruban) honey, papaya, (fried) banana, pineapple, the beach, the top of the iceberg, your dushi, a batido (smoothie) OR, if you're like me staring at the grey Dutch sky, with sunny summer dreams!
