Shakshuka

Ingredients for 4 people

275 grams couscous

2 tablespoons olive oil

1 onion, chopped

2 tablespoons organic shakshuka spices from iDo!

3 cloves garlic, minced

2 red bell peppers, cut into 1cm pieces

1 zucchini, diced

6 tomatoes, chopped

1 bottle of passata, 680 grams

4-6 eggs

freshly ground pepper and salt to taste

bunch of parsley for garnish

You can make your own shakshuka spice mix as follows:

  • 1 teaspoon cayenne pepper
  • 2 teaspoons cumin seeds
  • 1 teaspoon chili powder
  • 2 teaspoons paprika powder

 

Preparation 

  1. Sauté the onion in olive oil, add the shakshuka spices and cook until fragrant.
  2. Add the garlic, then the bell pepper and zucchini.
  3. Stir-fry for about 2 minutes.
  4. Add the tomatoes and passata and bring to a boil, stirring for about 3 minutes.
  5. Carefully crack an egg over the sauce, making sure the yolk stays intact. Repeat for all eggs.
  6. Place the lid on the pan and heat until the lid is hot.
  7. Place in the EcoStoof for half an hour or longer.
  8. Meanwhile, prepare the couscous according to the package instructions.
  9. Divide couscous with shakshuka among plates and garnish with parsley.
