Asparagus with Gribiche sauce
Iris lives in the Limburg asparagus region and buys her asparagus from the grower around the corner. In Limburg, they often eat asparagus pieces that have been rejected for commercial sale. These are just as delicious as long asparagus but much cheaper!

Nasi Goreng EcoStoof
'Nasi Goreng' originally comes from Indonesia and Malaysia. It literally means 'fried rice'. We made Nasi from stewed rice in the EcoStoof. A surprisingly delicious result because all the flavours are wonderfully absorbed by the rice.

Mediterranean Cauliflower Stew adapted from a Mari Maris recipe
In 2013, chef Mari Maris published the "Vegetable Bible." Her latest cookbook, "VEGETABLES," is about everyday potatoes, elegant peas, Sunday sauerkraut, and much, much more. Last year, while Maris was writing this cookbook, we sent her an EcoStoof. She used it to make couscous and vegetable stew dishes. The recipe below comes from her new cookbook and has been adapted for the EcoStoof by Iris.
